First, we’re going to start by peeling our lemons. To do this, go ahead and just chop the ends off the lemon, then stand it on one end and use the knife to slice it downwards, trying to keep as much fruit on the fruit as possible and just taking the skin off.
Once you are done with that, flip it on its side and chop the lemon in half. You are doing this because we want to de-seed it—there’s going to be a lot of seeds in there. Just use your knife or spoon to scoop it out.
Do that with your other three lemons.
Transfer the lemon chunks into a Ziploc bag and freeze them for about four hours, or until completely frozen solid.
Add the frozen lemons to your food processor and blend until they start to stick together and break down into a somewhat smooth consistency. This might take a few minutes, so be patient and scrape down the sides as needed.
While the lemons are blending, combine 3/4 cup of sugar and 1/4 cup of hot water in a small bowl or measuring cup. Stir this to create a sugar water mixture. This dissolves the sugar, so we don’t have a grainy sorbet. It should look clear when we’re done.
Add in our sugar water to the food processor with the blended lemons and blend until fully incorporated.
Put this in a 9×5-inch loaf pan or freezer-safe container. Check for any remaining seeds as you transfer—sometimes some seeds hide in there, so you’ll want to remove them now.
Pop this in the freezer and freeze it for about five hours or until it’s completely frozen.
When you’re ready to serve, just let it sit at room temperature for a few minutes before scooping. This makes it easier to scoop and gives it that perfect sorbet texture.
