The 2-Ingredient Watermelon Ice Cream Recipe

If you have a watermelon sitting in your refrigerator and want to try the viral ice cream, then you have come to the right place.

This 2-ingredient watermelon ice cream may sound strange, but once you taste it, you’ll understand why social media is going nuts.

Not to mention, this dish requires only two ingredients: watermelon and heavy whipping cream. That is it. The trick is not the ingredients but how frozen the watermelon is.

  • ½ medium watermelon
  • ½ to ¾ cup heavy whipping cream

How to Make Watermelon Ice Cream?

Prepare the Watermelon

Wash the outside of your watermelon before you cut into it.

Cut the watermelon in half.

Take the half and scoop out a shallow area in the middle, creating a bowl inside the watermelon.

Cover the watermelon half tightly with plastic wrap.

Freeze the Watermelon

Place the covered watermelon half in the freezer.

Freeze it for at least 24 hours, but 48 hours is better, especially if your freezer is not extremely cold.

The watermelon should be rock hard all the way through. After another 48 hours in the freezer, your watermelon should be icy.

If you can scrape into the watermelon with a spoon and it feels soft or pulpy, put it back in the freezer.

Start Scraping

Once the watermelon is frozen, unwrap and place it inside a sturdy bowl or another container so it does not slide around while you work.

Pour the heavy whipping cream into the frozen watermelon.

Take a large, sturdy spoon and start scraping the frozen watermelon.

Keep Scraping

To get the ice cream out of the fruit, scrape the melon while you add the cream.

I actually love this because you get to serve the dessert right inside the melon.

Serve immediately.

Your Watermelon Needs to Be Completely Frozen

I cannot stress this part enough.

If your watermelon is only partially frozen, you’ll get a watery mixture. The watermelon should be hard and icy throughout.

Don’t.

Start by gradually adding more as you scrape the watermelon.

This is not going to have the smooth texture of an ice cream made in a machine.

It is somewhere between homemade ice cream and a frozen fruit dessert.
