This Halloween Pillsbury ice cream sandwich Recipe is an easy and delicious family favorite! Layers of Pillsbury Halloween sugar cookies with creamy vanilla ice cream in between and a shower of sprinkles to finish it off. YUM!

For years, chocolate-dipped Rice Krispies have been my go-to Halloween treat. And I still love them! But after scrolling through TikTok, I found this amazing treat.

These ice cream cookies are just super easy, festive, and made entirely of things you can grab at a store.

I’ve made this with vanilla ice cream every time, but this recipe is begging for you to experiment. Chocolate ice cream, cookies and cream, even a scoop of orange sherbet, all sound like a good time to me.

What to Serve With This

As far as serving goes, this dessert is perfect, but a few things make it even better. A drizzle of chocolate or caramel sauce over the top before serving is something I love.

If you want an awesome Halloween movie night spread, add popcorn and apple cider on the side.

Ingredients

  • 2 boxes Pillsbury Halloween sugar cookies — The star of the show. The number of boxes depends on the size of your dish.
  • Vanilla ice cream — This is your middle layer for the cookie sandwich. Let it soften slightly so it can spread easily.
  • Halloween sprinkles — Purely for fun.

How to Make It

Start by layering your sugar cookies across the bottom of your dish, covering it as evenly as you can.

In another dish freeze the ice cream for 4-8 hours so it can hold a square shape. Place the perfectly shaped ice-cream on the cookies.

Place a second layer of sugar cookies on top of the ice cream.

Freeze the whole dish for six hours, or until it’s set and ready to slice and serve. Place sprinkles on the side of each cube of ice cream sandwich.

How to Store

Keep the dish covered tightly with plastic wrap or a lid in the freezer.

It’ll keep well for up to two weeks, though the cookie layers may soften slightly the longer it sits. I recommend enjoying it within the first few days for the best texture.

Substitutions

If you do not have Pillsbury brand of cookies, any sugar cookie dough baked will do.

The flavor of ice cream is your choice, but a few of my favorites are Cookies and cream, chocolate, or orange sherbet; all make a fun swap here.

For more toppings, crushed Oreos or mini chocolate chips work great.
